The Tart Cherry has long been used as a filling in pies, cakes and tarts. However, recent research has revealed that the cherry is also rich in anthocyanins, a type of antioxidant credited with free-radical neutralizing properties. Additionally, anthocyanins are responsible for the fruit's red hue.
